INGREDIENTS
50g flaked salmon
1 tbsp Grainy Mustard
4 baby new potatoes
1/4 cup leafy greens
1/2 Smashed Avocado
Ground Italian Herb Mix
2 tbsp pickled red onion (or sauerkraut!)
15g Wild Rice
1/2 Lemon
25g pumpkin seeds
6 olives
Fresh parsley
1/3 cup sliced cucumber
Salt and Pepper to taste
1 tbsp olive oil
METHOD
If you’re buying fresh salmon, pop it in the oven at 425 F and roast for 10-15 minutes – it’s done when it’s easily flaked! Store bought is also fine. Meanwhile, boil the new potatoes in a pan until soft all the way through. Whilst they’re cooking, smash up half an avocado and add the salt, pepper, ground Italian herbs and lemon to the mix. Pop it in the fridge whilst you slice your cucumber. When your salmon and potatoes are ready, place the greens, rice, potatoes and cucumber in a bowl. Mix in the mustard, dollop the avocado, then flake the salmon over the bowl. Finally, add the onion, pumpkin seeds, olives and fresh herbs to make the dish a true a masterpiece!
