This is really easy to whip up yourself. But, we’ve all have those days when meal prep sounds like the last way to spend an evening. Ingredients
Serves 1
1 rice noodle bundle
1 cup spinach
1/2 cup sliced cucumber
1/2 Avocado
1/2 lemon
25g mixed seeds
30g desiccated coconut
1/2 cup broccoli
1/3 cup Roasted Peppers
1 cup grated carrots
Fresh coriander and basil
Sprinkle of soy sauce and peanuts to taste!
Method
Wash, drain and place your spinach in shallow salad bowl.
Boil the rice noodles and broccoli until soft, or to your taste preference.
Meanwhile, slice the cucumber and grate the carrots. Pop these in the fridge whilst you mash your avocado. Mix in the lemon and mixed seeds at the end.
When your broccoli and rice noodles are done, place them on your freshly washed spinach leaves with the cucumber and carrots, dolloping your smashed avo’ where ever you mayfancy! Finally, place your peppers throughout the dish and top with the coconut, fresh herbs (also washed), soy sauce and handful of peanuts. So easy and delicious!
