Hummus, the popular Middle Eastern dip, is low in fat whilst high in fibre and protein, making it a perfect addition to a healthy diet. Hummus contains many vitamins and minerals as well as about 20 essential Amino Acids, including large dosages of Tryptophan, Phenylalanine and Tyrosine. This combination makes the ultimate good mood food!

Sun-dried tomato and basil hummus

Ingredients:

  • 1 can of chickpeas (drained)
  • 170g sundried tomatoes
  • 7.5 tbsp olive oil
  • 10 tbsp water
  • 3 heaped tbsp tahini
  • handful of basil
  • 2 lemons
  • 3 cloves garlic
  • 3 tsp cinnamon
  • salt and pepper to taste

Method:

Blend

Roast carrot hummus

Ingredients:

  • 1 can of chickpeas
  • 2 carrots
  • 7.5 tbl olive oil
  • 5 tbl water
  • 2 sprigs of rosemary
  • 1 lemon
  • 1 heaped tbl tahini
  • 2 cloves garlic
  • 1 tsp cumin
  • 1 red chilli pepper
  • salt and pepper to taste

Method:

  1. Juice lemon
  2. Roast garlic @ for 5-10 minutes
  3. Roast carrots @ 180 for 45 minutes
  4. Blend

Roast aubergine and black bean hummus

Ingredients:

  • 1 can of chickpeas
  • 2 carrots
  • 7.5 tbl olive oil
  • 5 tbl water
  • 2 sprigs of rosemary
  • 1 lemon
  • 1 heaped tbl tahini
  • 2 cloves garlic
  • 1 tsp cumin
  • 1 red chilli pepper
  • salt and pepper to taste

Method:

  1. Juice lemon
  2. Bake garlic at 180 for 5-10 mins
  3. Bake aubergine for 25 mins
  4. Blend all ingredients

On Saturday 25th July, Rosie’s partner Andy tragically passed away. He wasn’t ill and his passing has come as a devastating blow to all of his family and friends.
