Overnight Oats with Raspberries

Overnight oats are a great morning time saver and always seem to be a hit with fussy children. By soaking the oats overnight you break down the phytic acid and make them much easier to digest. Soaking also releases the natural sugars which makes this recipe taste lovely and sweet without the need for a sweetener. The raspberries add antioxidants, vitamin C and manganese.

If you enjoy the ease and taste of these overnight oats there are endless possibilities. Try mixing it up with different fruits or why not add some chia seeds for an added omega 3 boost. This bircher muesli recipe is essentially overnight oats with some added extras. Or you can even try layering in nut butters or adding coco powder.

Ingredients:

 Serves 1

  • 45g oats
  • 80g plain yogurt
  • 125g raspberries
  • 2 tbsp milk (or almond milk)

Method:

  • Before you go to bed, mix together oats, milk and yogurt
  • Refrigerate overnight
  • Finely chop half the raspberries and puree the other half in a blender or food processor until smooth.
  • Layer the oatmeal with the raspberries and raspberry puree.

*Optional to heat the oats in the morning before adding the raspberries
